Loved it subbed gluten free bread with the croutons, green beans instead of asparagus cause we had asparagus the night before, upped the minced red onion & garlic, champagne vinegar & less Parmesan cheese.
This will be on our veg night dinner menu from now on as is and with more variations I’m sure

I've never had an panzanella, so while this might be a perfect panzanella, I think I would prefer the leeks and asparagus roasted or sauteed. It was too soft and slippery for my liking. However, my son loved the texture!

I love panzanella and loved the spring ingredients. I went a little heavier on the seasonings, dressing, etc. leeks are a pain but they are good.
