Sticky Cranberry Hand Pies
Combine the flour and salt in a large mixing bowl. Add the vegetable oil and milk and stir until the dough reaches the "shaggy mess" stage. (The dough should form a ball when gently squeezed together.) Add more milk, 1 tablespoon at a time, if the dough is too dry. Divide the dough into three portions, shape into balls, and wrap tightly in plastic wrap. Transfer to the refrigerator and chill for at least 30 minutes.

Sticky Cranberry Hand Pies
Combine the cranberries and grated apple in a medium saucepan over medium heat. Add the salt and orange zest and cook, stirring occasionally, until the cranberries have burst and cooked down to a thick, sticky consistency, 10-15 minutes. Transfer the mixture to a medium mixing bowl and place in the refrigerator to chill until completely cool.

Preheat the oven to 375ºF. Line two baking sheets with parchment paper. Lightly flour a clean work surface. Working with one dough ball at a time, pull the chilled pie dough from the refrigerator and unwrap. Place on the floured worksurface and roll out to 1/4-inch thick, rotating the dough and adding more flour as needed if it begins to stick to the counter or rolling pin. Using a small drinking glass or 3-inch cutter dipped in flour, cut out as many circles as possible. Gather the dough scraps, form into a ball, and roll and cut again. Repeat the procedure with the remaining dough balls.

Brush half of the dough rounds with the beaten egg. Place about 1 tablespoon of filling in the center of each brushed circle. Place the un-brushed dough circles on top of each filled circle and gently press the edges together to seal. Use a fork to crimp the edges. Cut a small X in the top of each hand pie to allow steam to escape. Transfer the pies to the prepared baking sheets. Brush lightly with the egg wash, and sprinkle with some of the turbinado sugar. Bake the hand pies on middle rack of oven until they are deep golden brown, 12-15 minutes.

Sticky Cranberry Hand Pies
Check to see that hand pies are done. Remove from oven or add time as needed. Transfer the hand pies to a cooling rack and allow to cool for 5 minutes.
