Fantastic easy to make recipe

Definitely will keep this recipe- it’s awesome even without coconut milk. I’d like advice on how to add lentils.

We don't say many "c" words (from the cooking world) around my husband...unless it's chili. He says he doesn't like curry. So I called it sweet potatoe stew. And an excellent choice it was. Cooking the sweet potatoes took double the time. Possibly cut in smaller cubes. Used tomato paste as my passata, which also thickens up the juices. Used 1/2 the amount of curry powder and doubled the greenery. So satisfying.

This was amazing! I will definitely be making this again.

So tasty! Didn’t put as much paprika as the recipe also put the sweet potato and chick peas into the pot to get some seasoning on it for a few minutes Definitely going to be making this again

Loved it, and especially that it was so open to adjustment for heat. Hubby can’t handle spices. This way the layers of flavors were there and others could bump it up as desired

Yummly User 2 years ago
it was decent but there was definitely something missing, needs more heat.

This turned out great. Next time I will add more red pepper flakes because it could use more heat.

Yummo!
I used pistachio milk (homemade) instead of coconut milk to avoid saturated fats...

It was ok I followed the directions to the T and it was just lacking flavor.

I had bok choy to use, so I subbed that instead of the spinach. I put it in the IP at the same time as the sweet potatoes. Maybe I made my sweet potato pieces bigger, but I had to cook mine a little longer than the 2 minutes with QR. I did an additional 1 min, QR after and they were perfect! I imagine if I would have let it natural release for a bit the first time I would have achieved the same results.

As long as you do the food prep beforehand, I love finding new recipes for the instant pot! We used an entire can of coconut milk (a 13.5oz can is just over 1.5cups) and definitely added chickpeas. Was incredibly easy to follow directions and very tasty. Looking forward to making it again.
