- 14 oz. butter beans (or other canned white bean, rinsed and drained well)
- 1/2 cup white onion (finely chopped)
- 1 clove garlic (finely minced)
- 1/2 tsp. dried oregano
- 1 Tbsp. chopped fresh dill
- 1/2 cup broth
- 1/2 tsp. kosher salt (more or less to taste)
- oil (for sautéing, I use avocado oil)
- 1/2 cup fresh parsley leaves (roughly chopped)
- 1 Tbsp. fresh dill
- 2 Tbsp. fresh lemon juice
- 4 Tbsp. extra virgin olive oil (or as much as needed to coat parsley well)
- kosher salt (to taste, start with ¼ tsp and work up)
- 230 grams mackerel (Gold Seal Mediterranean style, drained of the oil)
- 6 slices sourdough bread (toasted and brushed with some extra virgin olive oil while still hot)
- salt (Sprinkle of Maldon, or other flakey salt)
- red pepper flakes (optional)
- pepperoncini (optional)
