Thai Crunch Salad with Thai Peanut Dressing is a light and healthy gluten-free salad recipe that's packed with savory flavor. This is one salad you will not mind eating!

- 3 cups coleslaw mix (green cabbage, red cabbage, carrot mix)
- 1/2 red pepper (sliced into thin matchsticks)
- 1 chicken breast (cooked then shredded)
- 2 green onions (chopped)
- 3 Tbsp. peanuts (finely chopped)
- 3 Tbsp. chopped cilantro
- 4 Tbsp. smooth peanut butter (I used Smucker’s Natural)
- 2 Tbsp. honey
- 2 Tbsp. warm water
- 1 1/2 Tbsp. gluten free tamari sauce (dish will not be GF if using traditional soy sauce)
- 1 Tbsp. rice vinegar
- 1/2 large lime (slice remaining 1/2 lime into wedges)
- 1 tsp. toasted sesame seeds
- 1 tsp. toasted sesame oil
- 1/4 tsp. ground ginger
- 2 cloves garlic (pressed or minced)

Delicious! The dressing is so tasty. I added a teaspoon of sriracha to give it a little kick but otherwise followed the recipe Will definitely make this again!

This is such a fantastic recipe that I’m making it again next week. I’m going to try it with tofu next time because my sister is a vegetarian and I think she’d love this.
