- 2 Tbsp. soy sauce (or Bragg's liquid aminos)

- spice (to taste, cayenne powder or Sriracha sauce)
- 1 can full fat coconut milk
- 3 potatoes (medium-sized, peeled and chopped into 1/2-inch cubes)
- 4 carrots (medium-sized, peeled and sliced into rounds)
- 1/3 cup green beans (opt., I used frozen ones.)
- 1 onion (peeled and coarsely chopped)
- 2 Tbsp. soy sauce (or Bragg's liquid aminos)
- 1/2 Tbsp. Thai Kitchen Red Curry Paste
- 2 tsp. curry powder
- 1/2 tsp. salt
- 1/8 tsp. cumin (optional)
- 1/2 tsp. turmeric
- 1/2 Tbsp. cornstarch (to thicken, opt.)

Tasty and fairly easy. Green beans were still a bit hard, so next time I’ll cook the them longer before adding the coconut milk. Also will use more red Thai curry paste for more flavor in the sauce.

Delicious and easy! Doesnt take long to cook. You can add whatever vegetables you want and it makes it very filling.

It was so good! I added garlic, basil, cooked chicken (rather than tofu) , and broccoli. I also added some basil and sriracha at the end and doubled the curry paste for more flavor. The last change I made was to replace half of the water with chicken broth. Will definitely make again!!
