- 1 Tbsp. vegetable oil

- 0.5 kilograms boneless skinless chicken breasts
- 300 mL unsweetened coconut milk
- 15 cremini mushrooms (quartered)
- 1/2 red pepper (capsicum, thinly sliced)
- 1/2 yellow pepper (capsicum, thinly sliced)
- 5 spring onions (with the greens chopped roughly and whites chopped finely)
- 3 Tbsp. fish sauce
- 2 Tbsp. Sriracha

It turned out great it looked lots like the picture, judt don't be overwhelmed by the amount of ingredients and you'll be good.

Very nice recipe but amount of chilis is extreme (perhaps fresh asian chilis are much more spicy). Quite a lot of veggies so 300gr chicken is enough already. For the paste: use only three fresh asian chilis, add a few tablespoons tomatopaste, some water and half a red bellpepper (this creates volume, improving blending as well) and all other ingredients required for the paste. At the end add one or two table spoons fish sauce, lot more tomatopaste, lime leaves and smashed lemongrass for another ten minutes. If no brown sugar use honey, soy sauce or regular sugar instead. Sriracha or chili-oil/vinegar to taste at end.
