Made a 1/2 batch - absolutely delicious! Yum. Tastes like dessert. Definitely will make again.

I changed some things:
-Used almond coconut milk
-Added roasted cinnamon to both the mix & topping
-Cut the sugar in half for the mix
-Added more chopped pecans to topping
-Added a little extra vanilla extract to the mix
-Cut salt in half
-Used 3 sweet potatoes (all I had on hand) & 2 eggs
-Mixed topping w/electric beater
-Mixed mix w/electric beater
Delicious!! I'm going to make this for Thanksgiving this year! You'll want to eat the entire 13x9 pan of this crunchy & creamy casserole all at one time! (But don't!)

This was a huge hit at our Thanksgiving dinner table. Not too sweet but sweet enough to complement our other savory sides. People were fighting over who would take home the leftovers.
