- 5 lb. chicken drumsticks
- 1 onion (large, cut into quarters)
- 1 head garlic (cut in half)
- 2 parsnips (large, peeled and cut into large pieces, grate 1 of the pieces to make 1 cup)
- 1 head celery (chopped into large pieces)
- 1 bunch fresh parsley
- 1 bunch fresh dill
- 1 tsp. salt
- 1/2 tsp. whole black peppercorns
- 1/2 tsp. celery seed
- 1 bay leaf
- chicken (Shredded, from cooking the broth chicken pieces)
- 5 carrots (large, peeled and cut into bite-size pieces)
- 2 parsnips (large, cut 1 1/2 into bite-size pieces and grate the rest)
- 1 head celery (cut into bite-size pieces)
- 1 sweet potato (large, peeled and cut into bite-size pieces)
- 1/2 tsp. salt (* see note)
