Description
Fresh green beans and grape tomatoes add a vibrant twist to this perennial favorite. Though the salad is good right away, it’s even better after the flavors of the light, not-too-sweet dressing have a chance to mingle with the other ingredients for a few hours in the fridge. For something different, substitute basil for the parsley and other canned beans for the kidney beans and chickpeas. The recipe, which makes about 6 cups, is a Yummly original created by Ashley Strickland Freeman.

- 3/4 tsp. salt (plus more for cooking green beans)
- 1/2 lb. fresh green beans (trimmed)
- 1/4 cup extra-virgin olive oil
- 1 Tbsp. red wine vinegar
- 1 Tbsp. Dijon mustard
- 2 tsp. honey
- 2 cloves garlic (minced)
- 15.5 oz. light red kidney beans (1 can)
- 15.5 oz. chickpeas (1 can)
- 1 cup grape tomatoes
- 1/4 cup red onion (minced)
- 1/4 cup fresh flat-leaf parsley (chopped)
- 1/2 tsp. black pepper

Directions
- Bring a medium saucepan of salted water to a boil. Meanwhile, trim ends from green beans, then cut beans into bite-size pieces. Fill a bowl with ice water. Add green beans to boiling water and cook until bright green and crisp-tender, 3-4 minutes. Drain and immediately plunge into the ice water bath. Let beans cool, then drain.
- Whisk together olive oil, vinegar, mustard, honey, and garlic in a medium bowl.
- Drain and rinse kidney beans and chickpeas. Cut grape tomatoes in half.
- Add green beans, kidney beans, chickpeas, tomatoes, onion, parsley, 3/4 tsp. salt, and the pepper to bowl with mustard dressing and toss gently until ingredients are well coated. Serve salad, or cover and chill up to 3 days (if making ahead, let salad stand at room temperature about 30 minutes before serving).
