Didnt use spanish onions and I slightly overcooked it, next time I'll know what to do. Other than that pretty good.

I had this traditional dish in Madrid recently and I really enjoyed it. This recipe was okay. A little bland I’m afraid. Salt liberally. The potatoes took a while to cook down so some timing should be included in the instructions. Next time I would add some red peppers and maybe some chorizo or Serrano ham to the potato mixture for more flavor. You can really change this up, however the potatoes are key here.
