If you’re looking for a goes-with-every-flavor-of-turkey stuffing, then this is the recipe for you. Seasoned with fresh parsley, sage, and rosemary, it’s the one-size-fits-all bread stuffing. Plus, there are options for those who like their stuffing softer or more crispy. The day before, be sure to cube up the bread and set it in a sheet pan on the counter or in a cold oven to dry out overnight. This step is crucial in preventing the stuffing from becoming mushy once you add the broth. (Oops — forgot to let the bread cubes stand overnight? Just bake them briefly at 250°F.) Ingredients
- 12 oz. French bread (1 loaf)
- cooking oil spray (or a little vegetable oil)
- 1 large yellow onion
- 2 stalks celery (large)
- 2 cloves garlic
- 3 Tbsp. chopped fresh parsley
- 2 Tbsp. chopped fresh sage (plus small sage leaves for garnish; or use 2 tsp. dried, optional)
- 1 Tbsp. chopped fresh rosemary (plus small leaves for garnish; or use 1 tsp. dried, optional)
- 3/4 cup salted butter
- 3/4 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 2 cups chicken broth
- 2 large eggs
Directions
- Cut French bread into 3/4- to 1-inch cubes. Spread bread in a single layer in a sheet pan and let stand overnight. (If you forget this step, you can bake the bread cubes at 250°F for about 30 minutes to dry out.)
- Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish and set aside. Chop onion to make 2 cups and chop celery to make 1 cup. Mince garlic. Chop herbs separately.
- Melt butter in a large frying pan over medium-high heat. Add onion, celery, and garlic and cook, stirring occasionally, until vegetables are tender, about 8 minutes. Stir in parsley, sage, rosemary, salt, and pepper.
- Combine bread cubes and sauteed vegetables in the prepared baking dish. In a medium bowl, whisk together broth and eggs to blend. Pour over bread mixture and toss to combine until the bread soaks up the liquid. (This takes several minutes; don’t rush this step.)
- Bake stuffing until the bread cubes are lightly toasted, about 30 minutes. Or if you prefer a more crusty stuffing, bake it 10-15 minutes longer, until bread cubes are browner and crispier. Sprinkle stuffing with a few small sage and rosemary leaves if you like.
