- 1 lb. Shady Brook Farms® Fresh Young Bone-In Turkey Breast (or Shady Brook Farms® Fresh Whole Turkey)
- 1 box Corn Bread (prepared, follow box instructions)
- 16 large eggs (for poaching)
- 2 egg yolks
- 2 tsp. water
- kosher salt
- 1 cup unsalted butter (2 sticks)
- 2 Tbsp. Chipotle Tabasco® Sauce

Directions
- Thaw turkey and prepare according to package directions. Place turkey breast-side up on the rack in a shallow roasting pan. Brush breast with vegetable oil or melted butter. Roast at 350° F. When the breast is golden brown, cover with a loose tent of aluminum foil to prevent over-browning. The turkey is done when a meat thermometer reads at least 165° F in the breast. For easier slicing, let stand 10 minutes.
- For the hollandaise sauce, place egg yolks, water, lemon juice and a pinch of salt into a small mixing bowl. Melt butter in small sauce pan over high heat, stirring and swirling. Once melted quickly pour into a cup that is easily pourable.
- Using a wire whisk or an immersion blender, begin whisking the egg yolk mixture. Slowly add the melted butter while continuing to whisk or blend. Add Chipotle Tabasco® and gently whisk. Keep sauce in a warm place until needed for the Turkey Benedicts.
