- nonstick cooking spray
- 1/4 sweet onion (medium, sliced)
- 1/2 red bell pepper (sliced)
- 1 tsp. yellow cornmeal (plain)
- 1 1/2 cups cheddar cheese (shredded)
- 1/2 lb. Shady Brook Farms® Lean Original Turkey Breakfast Sausage (about 7 links, cooked according to package instructions, sliced into rounds)
- 4 large eggs
- 1/2 tsp. fresh thyme leaves (minced)

Directions
- Preheat oven to 500°F and set a rack in the top third of the oven. Heat a large nonstick skillet, spray with cooking spray, and cook the onion and pepper until tender-crisp, 3-5 minutes.
- Roll dough to about 1/4-inch thickness (about 14x10 inches) on a lightly floured surface.
- Spray a 15x10-inch rimmed sheet pan with cooking spray and sprinkle with cornmeal.
