Amaaaaaazzzinnnggg. Cooked potatoes in skillet first with onions also added turmeric and a couple dashes of cayenne pepper instead of Green chilies, added mini bell pepper, half a Roma tomato, and only a couple spoons of black beans. Put almond cheese on tortillas stuffed, sealed, and made the outside slightly crispy with separate pan and a little oil. I used coconut oil. Very slightly sweet with a rich savory flavor and a hint of heat. I would probably add sliced avocado on top with another dash of cheese on top next time. A++

This has become a staple in my weekly cooking regime....always a treat..might consider doubling the goat cheese for extra naughty burritos..
