this was SO GOOD!! i do think the tomatoes should be roasted for a bit longer with some spices to add a more smoky flavor to the sauce, but it was amazing: i added some fresh mozzarella on top and it was one of the best pastas i’ve ever had.

It turned out really good. I assumed it was a “toss everything in the blender” recipe, but you have to bake the ingredients before blending them. It’s worth it, it’s yummy!
I don’t like how there’s quite a few pop-ups as you’re trying to read the recipe.

Really really good! I did add a little bit of cajun seasoning to give it a bit more flavor. Also it could totally use more veggies but overall it turned out great. My husband raved about it all night lol!

Really yummy, better than I expected, you will end up with a lot of pasta sauce so cook lots of pasta as well, you definitely need a blender to get the soaked cashews really fine into the smooth consistency, and if you want the aesthetics better add whole leaves of basil to the sauce not chopped basil, the chopped basil is hard to see in the dish :) also did take me a bit longer than expected.

Cured my fix for tomato pasta...but not something I feel like I need to have again soon. And I have a ton of leftovers!
