- 1 cup lentils (You can soak them overnight for better results. This is not necessary)
- 1 cup pinto beans (fresh will be better, but, you can use the canned version)
- 3 potatoes (tiny white, or one big white potato)
- 2 purple potatoes (small)
- 1/2 cup red onions (finely chopped)
- 1 cup cherry tomatoes
- 1 tsp. ginger (shredded)
- 1 tsp. crushed garlic
- 1 tsp. turmeric
- 5 seeds (mustard)
- 1 tsp. black mustard seeds
- 1 tsp. cumin seeds
- 1 tsp. cayenne pepper (optional)
- 1 tsp. cumin powder
- 4 curry leaves
- 1 cup tomato puree (canned or fresh)
- 2 tsp. vegetable oil
- 1/4 cup water
- 3 tsp. kosher salt (or to taste)
