- 4 fresh tomatoes (medium sized, ripe chopped)

- 2 tsp. cumin seeds
- 2 tsp. mustard seeds
- 15 curry leaves (optional)
- 1 pandan leaf (optional)
- 3 tsp. cumin powder
- 1/2 tsp. turmeric
- red chili flakes (/red chili powder to taste)
- 1 onion (medium, diced)
- 2 green chilies (sliced)
- 1 Tbsp. garlic (fresh, finely minced or grated)
- 2 cloves fresh ginger (grated)
- salt (to taste)
- 1 can coconut milk
