Easy, healthy, and delicious!! I always have these ingredients in my pantry, so it’s my GO TO meal if I don’t have time to go to the store! Hearty and filling even though it’s vegetarian/vegan

We will definitely make this again! I didn’t have celery, so I replaced it with cauliflower and added a sweet potato along with a small regular potato. I also didn’t have canned tomatoes, so I added leftover spaghetti sauce. My husband, not a vegetarian, loved this stew and wants me to make it again!

Was great flavour but i would use less stock to have it less soupy, even with simmer it does take awhile to get the consistency

instead of potato I used sweet potato and I thought that it really elevated tge flavors.

Really enjoyed this recipe, I put all the ingredients in the slow cooker except the bay leaf as didn’t have this. Was really nice!

Delicious and easy meal, loved by all, from vegans to meat-eaters. The cayenne pepper adds a nice kick!
