Description
Silken tofu blended with nutritional yeast, turmeric, and cashew milk wonderfully mimics the texture of chicken eggs in this veggie-loaded vegan quiche. The recipe is a Yummly original created by Sara Mellas.

- 1 frozen pie shell (vegan; or use a vegan refrigerated pie crust)
- 4 oz. cremini mushrooms
- 1/2 red bell pepper
- 4 oz. baby spinach
- 2 Tbsp. extra-virgin olive oil
- 1 dash salt (for vegetables)
- 1 dash black pepper (for vegetables)
- 1 block firm tofu (14 oz. per block, drained)
- 1/3 cup unsweetened cashew milk
- 1/4 cup nutritional yeast
- 1/2 tsp. turmeric
- 1/4 tsp. garlic powder
- 3/4 tsp. salt (for quiche base)
- 1/4 tsp. black pepper (for quiche base)

Directions
- Preheat the oven to 400°F. Move a rack to the lowest position in the oven.
- Prick the bottom of the frozen pie shell several times with a fork, and transfer to a baking sheet. If using a refrigerated crust, arrange it in a 9-inch pie pan, then prick the bottom with a fork.
- Bake the pie shell on bottom rack of oven until the bottom is slightly puffed, 12-14 minutes, or according to package directions. When done, remove from oven and set aside.

I thought it was good, however, I also thought the original recipe was lacking. I added onion, garlic, and a small potato (mostly because I needed to use the potato). I also didn't use a crust. made biscuits to go with it instead. so take my 5 star rating with a grain of salt because I changed the recipe quite a bit.

Did a bunch of substitutions and it still turned out fantastic. Used tomatoes, green onions, red onions, orange pepper, button mushrooms, extra firm tofu. No problem. It was easy and delicious.

It was good. it was not difficult to make since I had a batch of nutritional yeast and tofu on hand. i will say that adding hummus means it wont firm up so nicly, but I though I would experiment a bit. the top has a nice finish

I added red chilli, smoked paprika and used fresh garlic and shallots plus a dash of tamari sauce.
I made into 8 mini quiches and they turned out delicious. making them into mini quiches they cooked much faster too.

This is the most tedious quiche I’ve ever made then turned out to be the blandest. This reinforced that tofu should always be marinated.

It held together with a good consistency, but there could be some stronger flavours. Next time I woukd make it with leeks, a loaf of garlic and some more pepper. And also add some more seasoning too.
