I am stunned, but even my kids liked this. Will definitely make it again. Exceeded my expectations. I added some Italian seasoning and pepper.
My only complaint was on the proportions of ingredients. I had way more filling than I needed for 4 peppers. So I wish I’d known to get 6-8 peppers or cut back on the quinoa especially. Might add a little more sauce next time too.

I made them according to the recipe and they we're pretty good. Will try some of the other suggestions next time.

Delicious. I didnt have tomato sauce on hand so I used diced tomatoes and it too worked well. This is a new favorite.

Good! Needed some cumin and extra beans but was solid. Ate 1.5 peppers per person.

Delicious! Added a can of black beans and the additional seasonings recommended by other reviews. My toddler liked it!

this was pretty simple and fun! i added 1 extra clove of garlic for 3 cloves, because my garlic was pretty small and i'd read the reviews of this as a bit bland. then i followed another reviewer's lead on adding salt, cumin, black pepper and smoked paprika. just the filling of this was pretty good and will be using in paninis. the peppers themselves were pretty good! filling and nice.

I started making this filling tonight, and it is sooo bland!! Also Italian tomato sauce is not in the stores around me. I added some Italian seasoning to the sauce, but no luck, still bland. I ended up adding a bunch of spices and other ingredients...chilli powder, cumin, lime, salt, pepper, cilantro, chipotle pepper and salsa. It ended up tasting better, which is good because I thought I might have to throw it out, and I hate wasting food. Also, with 4 whole cups of cooked quinoa, why not add the whole can of beans?? Wish I had, it could have used more. I will have to be more selective in the future. Don't bother with this one!!
