- 4 serrano peppers (I used 4 and it was SPICY! I loved it, but if you are not a fan of spicy food, definitely use less)
- 5 cloves garlic
- 1 inch ginger (piece of, peeled and chopped)
- 3 Tbsp. rice vinegar
- 4 Tbsp. brown sugar
- 1/3 cup fish sauce
- 1/2 cup fresh lime juice
- 1/4 cup oil
- 1 lb. boneless skinless chicken breasts
- 6 oz. rice noodles
- 5 large carrots (julienned or grated)
- 1 head napa cabbage (shredded)
- 1 bunch cilantro (chopped)
- 1 cup green onion (chopped)
- 1 red bell pepper (seeded and diced)

I hate to be one of those reviewers who tells how they changed the recipe, but I did out of necessity. I am a farm wife cooking for a crew and just can't run to the grocery store to get one ingredient. So, I substituted yellow, red and orange bell peppers. And, I used bean curd noodles. It was delicious and it does make a big portion, so the leftovers were served the next day. (I served it cold the first time, too). The only change I would make is to tone down the lime juice just a bit. Maybe if I used Serrano peppers it would have made a difference. Definitely adding this one to my file!!
