- 1 lb. navy beans (or dried yellow-eye, soaked overnight or quick soaked)
- 1 onion (large, chopped)
- 4 cloves garlic (minced)
- 5 cups water
- 4 tsp. smoked paprika (divided)
- 2 tsp. dried oregano (divided)
- 1 1/2 tsp. ground cumin (divided)
- 1 tsp. dried basil
- 1 lb. winter squash (cubed, or pumpkin peeled and cut into 3/4-inch dice, I used butternut)
- 1 red bell pepper (large, chopped)
- 1 jalapeño pepper (optional, seeded and finely chopped)
- 15 oz. diced tomatoes (fire-roasted preferred)
- 1 tsp. salt (or to taste)
- 1 bunch kale (removed from stems and sliced, about 12 ounces)
- 1 cup frozen corn (or fresh, optional)
- 1/2 cup fresh basil (chopped)

Soo good! Use broth instead of water! I added the spices right after the garlic to cook for a min. I had canned beans so I just put everything in at once and simmered for 40min before adding the kale, basil, corn. Would do fresh basil on top next time!

This was very tasty. We substituted vegetable bullion for water. Perfect for a cold evening! Hearty and filling.

Love this! So healthy but ridiculously tasty! Filling and made the whole family happy, we couldn't get enough. The recipe takes a long time, so good to make when you have help. Will make this again!
