  • 1 1/4 vegetables (kilos, 2 1/2 pounds mixed cold weather, such as carrots, parsnips, potatoes, kabocha, broccoli, cauliflower, etc.)
  • 2 Tbsp. cooking oil (or ghee)
  • 1 onion (medium, finely sliced)
  • 1 tsp. fine sea salt
  • fresh ginger (a "thumb" of, about 2.5 cm, 1 " in length, peeled and cut into thin matchsticks)
  • 4 cloves

    I made this tonight and it was really good, I did add a bunch of garlic and used cauliflower rice instead. I also separated the vegetables and put in the broccoli, cauliflower and zucchini halfway through. That way they didn’t get overcooked. I will definitely make this again.
