This was great! I substituted the squash for sweet potato as it’s what my grocery store had, and I’ll definitely make again!

next time, will trade out brown butter for a balsamic vinaigrette salad dressing. needs brightness.

Really easy to make and delicious, as well as filling for a weekday lunch. Loved the simple but yummy flavors.
