Smitten Kitchen has the best recipes. This one was perfect. Nice amount of spices and perfect consistency. I used melted butter. I will add walnuts next time. My favourite loaf recipe! That and SK pumpkin bread one. (Edit: try ultimate zucchini bread by Smitten Kitchen instead. More zucchini and even better.)

Delicious!! I followed the suggestion of another reviewer and did 1/2 cup applesauce and 1/4 oil and also replaced half the amount of regular sugar with brown sugar I also added raisins. Sweet and moist and loved by all in my house!

Delicious, great recipe! I used 1/2 cup apple sauce and 1/4 cup vegetable oil which worked great. And the raw sugar gave it a nice flavor as well. Will definitely be making these again.

This was my first time making this. It was easy to make and tastes great. I would probably rate it 5 stars when I have had a few more trys. I am going to make as muffins next time - should be good for lunch boxes.

super easy - I did a blend of walnuts, raisins, and cranberries. I also made them into muffins. Also, used Italian squash instead. LOL

i cut the oil by a third with applesauce and halved the white sugar with brown sugar. it was less sweet and lighter!

Pretty delicious - moist and gods flavor with the turbino sugar. I NEVER say this but could use a smudge more sugar?

Delicious! I did one loaf and 12 muffins, I also skipped the nuts and added mini chocolate chips! But super yummy!

Perfect!!
I used 1/3 cup melted butter, 1/3 cup olive oil and 1/3 canola oil. Also used 1 cup brown sugar and 1/2 cup granulated sugar

This was great with a few modifications! So good, that I gave some of it to my friends as a present :)
Substitutions:
Coconut oil for olive oil
Mashed bananas for 1/2 of the sugar
Used almond meal for 1/2 of the flour
3 cups zucchini instead of 2

Wow. Definitely in the regular weekly rotation. Great for using up juice pulp and unused spiralized veggie bits. Only thing I change is subbing 1/2 cup yogurt for 1/2 cup of the oil. Otherwise, following recipe exactly. Makes two loaves and our kids finish a loaf before its even cooled down. AMAZING.
