A great alternative to zucchini bread! I didn't have pineapple so I used raisins instead. I also added 1/2 teaspoon of ginger & a 1/4 teaspoon of cloves to the batter. I omitted the oil & maple syrup & used unsweetened applesauce & molasses instead. The result was a super moist cake, full of fall flavor. To keep it healthier, I garnished with chopped walnuts instead of cream cheese frosting. Hubby loved it!
