- 1 Tbsp. mustard (Dijon style)
- 1/2 Tbsp. onion powder
- 1 Tbsp. paprika
- 1 tsp. Piment d'Espelette (or cayenne pepper powder, any hot chili powder will work)
- 1 Tbsp. oil
- salt
- 15 garlic cloves
- 5 lb. pork loin roast
- 3 cups apple cider (hard, semi-sweet works best)
- 2 yellow onions
- 6 apples (cut into halves)
- veggies (Other, if desired, potatoes, carrots, etc)
- 4 Tbsp. butter (optional)
- 2 cups juice (/sauce from roasting, strained)
- 1/2 cup cream
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. calvados (can also use cognac or brandy)
- 1 Tbsp. cornstarch (/tapioca starch – optional)
- 2 apple (the baked, halves, peeled and seeds removed - optional)
