- 1/4 cup olive oil
- 2 lb. chicken thighs (with skin and bone in, about 8)
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. pepper (or to taste)
- 1 onion (large, chopped)
- 1 bell pepper (chopped, I used 1/2 green and 1/2 red)
- 6 cloves garlic (minced)
- 1 tsp. oregano
- 1 tsp. smoked paprika
- 1 tsp. cumin (ground)
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. pepper (or to taste)
- 1 Tbsp. tomato paste
- 1/2 cup white wine (I used Chardonay)
- 2 cups rice (long grain, uncooked)
- 2 bay leaves
- 1 cup frozen peas
- 1 cup frozen corn
- 12 oz. beer (1 bottle)
- 3 cups chicken broth low sodium
- 1/4 cup cilantro (chopped for garnish, optional)

Great flavor. I tried a combination of both thighs and breasts. The thighs were definitely the way to go, more tender.
