Easy, healthy and delicious, at least if you like the strong taste of arugula, as I do. I added grape tomatoes, halved.

a simple and bright salad. watch how much lemon you put in, because it is quite tart, but refreshing.

Loved this! The arugula & Parmesan go so well w/ the lemon vinaigrette. Any recipe that uses few ingredients but packs a lot of flavor is always up my alley.

Did not taste good at all. It may have been the taste of the arugula was over powering or too much olive oil.
