- 1 cup chopped carrots (finely)
- 1/4 cup thai basil leaves (thinly sliced)
- 1/4 cup scallions (thinly sliced)
- 1 Tbsp. kosher salt (plus 2 teaspoons)
- 2 1/4 tsp. sriracha sauce
- 2 1/4 tsp. lime juice
- 1 Tbsp. cornstarch
- 4 slices bacon (cut into 1/2 inch pieces)
- 3 scallions (white and green separated, sliced thin on the bias)
- 2 tsp. fresh ginger (grated)
- 1/4 tsp. crushed red pepper flakes
- 4 oz. shiitake mushrooms (stemmed and thinly sliced.)
- 6 cups chicken broth
- 16 oz. dumplings (fresh or frozen)
- 2 Tbsp. fish sauce
- 2 Tbsp. lime juice
- 2 cups all-purpose flour (plus more for dusting)
- 3/4 cup cold water
