Description
Move over, mayo-based coleslaw. This sweet and savory salad is a welcome addition to any summer get together, and it comes together in just 15 minutes. Add grilled chicken or pork to make it a meal. The recipe, which makes 7 1/2 cups, is a Yummly original created by Ashley Strickland Freeman.
Ingredients

- 1/3 cup creamy peanut butter
- 2 Tbsp. light brown sugar (packed; use 1 1/2 Tbsp. if the peanut butter has added sugar)
- 2 Tbsp. fresh lime juice
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. reduced-sodium soy sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. vegetable oil
- 1/2 cup roasted peanuts
- 1/2 cup chopped fresh cilantro
- 2 green onions
- 1 pkg. shredded coleslaw mix (tri-color, 14 to 16 oz.)

Directions
- Whisk together peanut butter, brown sugar, lime juice, sesame oil, soy sauce, vinegar, and vegetable oil in a medium bowl. Set aside.
- Chop peanuts and cilantro. Slice green onions.
- Add coleslaw mix, peanuts, green onions, and cilantro to bowl with peanut butter dressing, tossing to coat. Serve, or cover and chill up to 1 hour.
