Easy and delicious! I also added some yellow onion with the brussels and sweet potato. Will definitely make again!

Lovely and simple fall meal. Next time I would pan fry the chicken separately to get a crispy skin, then finish cooking in the oven.

Baked Chicken Thighs w/Brussels and Sweet Potatoes was delicious. The only change I would make is to use less olive oil since the dish gets fairly greasy from the chicken skin. Also, the veggies did end up mushy, so I think if you cut them into bigger pieces, that would solve the problem.
