This turned out ok. This was the first time I have made barley so I’m not sure if the texture was correct but it took a lot of water to get soft enough. I used only half of the barley and I did not have the vegetable stock. I will definitely try again with the stock and edit the review.
Edit: this was really good and filling. Definitely a keeper
