- 1 yellow onion (diced)
- 2 cloves garlic (minced)
- 1 1/2 lb. ground beef
- salt
- pepper
- 4 oz. diced green chiles (I used mild)
- 15.5 oz. black beans (rinsed and drained thoroughly)
- 10 flour tortillas
- 3 cups shredded cheese (Mexican-blend)
- 1 batch red enchilada sauce (homemade, or 1 can store-bought enchilada sauce)
- chopped fresh cilantro (optional)
- green onions (optional)
- 2 Tbsp. vegetable oil
- 2 Tbsp. flour
- 4 Tbsp. chili powder (use less if you are afraid of it being too spicy)
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/4 tsp. oregano
- 1/8 tsp. cayenne pepper
- 2 cups vegetable stock (or chicken)
