- 4 lb. pork roast (boneless and at room temperature, this is important! - this should take about 20-30 minutes from being in the fridge)
- 2 lb. sauerkraut (I do not rinse mine)
- 1 Tbsp. caraway seeds (*note - you can omit this if you hate caraway seeds but for me it makes the dish)
- 1 cup yellow onion (chopped)
- 1/2 cup light brown sugar
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 1/2 tsp. smoked paprika
- 1 cup water (*optional)
- 2 Tbsp. olive oil

This was really somethin! Haven't had many sauerkraut-pork recipes but from those I have had, this one quite a bit head and shoulders above the rest. Followed recipe (unusual for me) used sauerkraut juice (Bubba's in a jar) and caraway seeds ( a must IMO). Sweet N Sour perfect blend. I may throw in a bay leaf next time! Took less time (an hour) at 325.

The family was divided on using caraway seeds, and the roast was too big to fit into a Dutch oven, so I divided the roast in two - one in the Dutch oven (without seeds) and one in a roasting pan (with seeds, and covered with foil). Other than that, I followed the recipe. Both with and without the caraway seeds were excellent, but everyone agreed the caraway seeds do make the recipe. I did not rinse the sauerkraut, and made a pork gravy to go with the dish. Excellent! One warning - my pork was done in less than an hour and a half. The next time I make this, I will start checking the temperature after one hour.

I made this pork roast recipe for New's Day, and my family ate it like little pigs, no pun intended. It was delicious, moist, and tasty. Most of my family do not care for sauerkraut; however, they were delightfully surprised with this recipe. I followed your directions to the "t" and will make it again. Thank you for a scrumptious and easy recipe, which I was proud to present on New Year's Day 2021!

Pork was well cooked but bland. The kraut was tasty but i should have used more sugar (i only used 1/2). i had to remove over 2 cups of liquid at 1 1/2 hours, leaving plenty of liquid.

Really good recipe. I loved it. I make sauerkraut and pork every new years eve ,but usually the only seasonings I use are salt and pepper. I wanted to add some different seasonings but didn't know were to start. This is a great recipe because it gives you lots of different ideas. This year I used paprika and grated fresh onion. Next year I think I will add the apple that the recipe suggests.

Wonderful!!!!! The only thing I did differently was adding 1/2 c mayo to tone down the kraut

Great traditional New Year recipe! Searing it is worth it and would make again. Leftovers are even better.
