- 4 cups rice (cooked short grained, like a sushi rice*)
- 1/2 lb. ground beef
- 2 tsp. soy sauce (I used tamari soy sauce)
- 2 cloves garlic (minced)
- 1 tsp. sesame oil
- 1 tsp. sugar
- 1/2 tsp. ground black pepper (freshly)
- 15 cucumbers (baby, sliced into rounds)
- 1/3 cup sugar
- 1 cup water
- 1 cup rice vinegar
- 1 pinch salt
- 1 lb. mushrooms (choice, thinly sliced, I used a mix of shitake, bunapi and beech)
- 2 tsp. vegetable oil
- 4 cloves garlic (minced)
- 2 Tbsp. mirin
- 1 Tbsp. tamari soy sauce
- 1 Tbsp. sesame oil
- 2 cups bean sprouts
- 2 Tbsp. rice vinegar
- 1 pinch salt
- 1 Tbsp. red chile pepper (ground, powder, such as cayenne, I left out because of kids)
- 2 cloves garlic (minced)
- 1 pinch kosher salt (heafty)
- 2 tsp. brown sugar
- 1 tsp. sesame oil
- 1 egg (fried, per person being served, probably 4-6, preferably with a runny yolk)
- 2 cups jicama (Julienned)
- 2 cups shredded carrots
- kimchi (choice--we love cucumber kimchi, see notes above)
- gochujang (Korean hot "sauce" that is more like a paste)
