- 1 stick cinnamon (small)
- 2 tsp. cumin seeds
- 2 tsp. black mustard seeds
- 1/2 tsp. fenugreek seeds
- 1/2 tsp. ground turmeric
- 2 tsp. curry powder (I used McCormick brand)
- 2 cloves garlic
- 1 inch ginger (grated)
- 1 onion (medium, chopped)
- 1 bunch collard greens (chopped fresh, no stem)
- 3 green chilies (2-)
- 1 tsp. vinegar
- 1 tsp. sugar
- red chili flakes (to taste)
- red chili powder (to taste)
- 15 oz. diced tomatoes (1 can ,with chilies preferable)
- 15 oz. water
- 15 oz. coconut milk (1 can)
- salt
- black pepper (to taste)
