I made this with about 2.2kg of pork shoulder, kept the rest the same and whilst it took longer to cook. It was pretty good. I would go for an uncovered simmer with temp up a little so sauce boiled down sooner. It slow cooked meat around 1 hour but took over 1.5 hours to thicken enough to use. Also, I cooked the skin in with it and that was very yummy but, it’s a textural thing and may not be for everyone.

Delicious. took a little while for the liquid to evaporate closer to 2 hours but pork was super tender and fell apart.
