This is a great recipe. I made it for myself and my husband. It was really quick and very filling. I added onions, avocado, cilantro, pickles, lots of tomatoes and lettuce. I actually didn't roll it up. Instead I cut the crust and meat into squares and added the other ingredients on the top and served more like a salad.

15 minutes was too long to cook the cheese, i’m thinking 10 minutes is perfect. other than that it was an excellent recipe

Interesting. Taste was really good. Good to make two batches of cheese. All in all a really good alternative to tortillas. Mine worked out better as burritos but would like to keep trying till I get it right.

This recipe makes a nice alternative to tortilla shells. Don't layer the cheese to thickly, or the shells will be a little too soft to eat by hand. I had that happen, but I rolled up my tacos, placed them in a greased ceramic baking pan, covered them in enchilada sauce and baked for 20 minutes at 400F.

Great!! I did cook the cheese a little linger so it was more like a taco shell!! It did make it a little harder to roll
