this worked REALLY well with live g free brownie mix, Aldi's gluten free mix. it doesn't have cake instructions in the back, and i couldn't find much by way of alternative g free mix uses, so i just followed conventional brownie to cake tweaks. it turned out AWESOME! I also added a quarter cup of cocoa powder and 3/4 c chocolate chips to the batter, because the mix wasn't a dark chocolate or double fudge type it thing. it didn't throw off the chemistry at all, rose very nicely. i also added more vanilla extract, because the more the merrier. adding an egg, replacing half the butter/oil with apple sauce, and adding a half tsp baking powders did the trick to make it into a cake! so pleased, so delicious. I'm in a cocoa-coma, and very happily so. i didn't really do the cream cheese swirl quite right, but it was still with repeating even if i mess that up again. gf all purpose flour works fine in the cream cheese mixture, I'm not sure what it's missing from the gluten.

the cheesecake didn't exactly turn out as cheesecake. I did a bigger serving size which called for more eggs and made it taste eggy and was more fluffy. As a result it didn't taste like cheesecake but it wasn't bad either. this was also my first time ever making cheesecake so that is probably a reason why it didn't turn out great. but besides that, it was really good.
