Description
Make-ahead breakfast casseroles are a time-honored tradition, especially when they include cheese and lots of bacon. This one goes with frozen hash browns for a jump-start, and can be assembled the day before and baked off in the morning. If your family loves hot sauce, you can add some to the custard as well as serving some at the table. The recipe is a Yummly original created by Ashley Strickland Freeman.
Ingredients

- cooking oil spray (or vegetable oil)
- 1 lb. thick-cut bacon
- 1 onion (small, diced)
- 1 red bell pepper (chopped)
- 32 oz. frozen hash brown potatoes (unthawed)
- 8 oz. extra sharp cheddar cheese (shredded)
- 12 large eggs
- 1/2 cup whole milk
- 2 tsp. hot sauce (such as Tabasco; optional, plus more for serving)
- 1 tsp. salt
- 3/4 tsp. black pepper
- chopped fresh chives (for serving)

Directions
- Coat a 9x13-inch or other shallow 3-quart baking dish with cooking oil spray.
- Cook bacon in batches in a large frying pan over medium-high heat until crisp, 6-8 minutes per batch. Transfer to paper towels to drain, reserving drippings in skillet. Crumble bacon once it has cooled.
- Carefully pour off and discard all but 1 tablespoon bacon drippings in skillet. Add onion and bell pepper and cook over medium-high heat, stirring occasionally, until tender, about 5 minutes.

Made this on Christmas Eve for Christmas morning and I’m so glad I did. Put it into bake before we started gifts and it was finished when we were done opening gifts, just as everyone started complaining they were hungry. Added diced ham to it, everyone loved it will definitely make this again and again.
