I wasn’t a fan of red sauce until now. This is fantastic. I used Badia brand for the spices.

Very good and very easy to follow. I also followed the cream cheese tip because my husband doesn’t like cottage cheese. Also couldn’t find Monterey Jack because of the shortage so I used cheddar and Mexican blend. I also mixed the cheese mixture in with the chicken because it seemed easier. I had made this before but I got scared I lost the recipe thinking I had it saved on Pinterest but Yummly saved my day lol

I made this tonight and it was my first time making enchiladas. It was a hit but the only thing I did differently was I used cream cheese in place of cottage cheese and it was fantastic. 4oz of cream cheese was plenty and 3/4 cup of sour cream
