Description
This light, fresh, family-friendly dish is perfect for a busy weeknight because it comes together quickly and is simple enough that older kids can help — or maybe even make on their own. To keep things easy, you can buy cut-up vegetables from your store’s produce section or salad bar. But even if you cut them up yourself, the secret to success is to have all the components prepped before you start to cook. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 8 oz. spaghetti
- 1 inch fresh ginger (1 inch is 2 tablespoons minced)
- 2 garlic cloves
- 1/3 cup low-sodium chicken broth
- 3 Tbsp. reduced-sodium soy sauce
- 2 Tbsp. hoisin sauce (or use 3 tablespoons for extra flavor)
- 1 Tbsp. toasted sesame oil (for sauce)
- 2 tsp. cornstarch
- 1 lb. boneless skinless chicken breasts
- 2 cups broccoli florets
- 2 cups sugar snap pea
- 1 cup red bell pepper (thinly sliced; 1 cup is 1/2 large bell pepper)
- 1/2 cup shredded carrots
- 1 Tbsp. vegetable oil
- 1 tsp. toasted sesame oil (for chicken)
- 2 Tbsp. water

Directions
- Cook spaghetti in a 5- to 6-quart pot or Dutch oven according to package directions until barely tender (“al dente”), about 10 minutes. Drain and set aside in a colander.
- While spaghetti cooks, prepare all the ingredients and the sauce. Using the edge of a spoon, scrape peel from the ginger. Then mince ginger and garlic and set aside.
- In a glass measuring cup, stir together chicken broth, reduced-sodium soy sauce, hoisin sauce, sesame oil for sauce, and cornstarch until cornstarch dissolves. Set sauce mixture aside.

Flavors did not blend/coat well. overall bland. might give it a second chance

I used an entire pack of spaghetti lol so it was a lot but I kept it juicy and everything turned out great, I preferred salt/pepper to it while served, instead of more soy sauce as recommended.

This was super easy to make! I followed the other reviews and doubled the sauce which may have been a bit too much, maybe I’ll go in between next time

This was delicious. My husband ate 2 heaping platefuls. I did substitute angel hair pasta for spaghetti. I loved all the vegetables and it was super easy to put together. I would definitely prep all of your vegetables and cut your chicken up ahead of time, it just makes it easier. Also, loved that I cooked it all in one pot. I will be making this again.

It was really good, although I think the sauce should be doubled. I made it the second time, doubled the sauce and it is delicious!!! And I am not a chef. So if I can, anyone can. Yum!!!

Had to sub teriyaki sauce plus a little honey and worcestershire for the hoisin. Also added cabbage and substituted asparagus for the broccoli... turned out great!

It was good, I may have over did it on the ginger, as that was definitely the star flavor in this dish. Good thing I love ginger! Would definitely make again with some possible adjustments to the sauce but that is a personal preference.

Very new to cooking, but really liked this one! It was easy to follow and tasted great even my fussy toddler enjoyed it!. (Definitely not the best photographer, but it looked pretty tasty too!!)

Taste is good I think my noodles were too thin but the flavor was good and directions were easy to follow.
