- 15 oz. chickpeas (rinsed and drained)
- 1/4 cup unsalted sunflower seeds (roasted, if salted, scale back on added salt)
- 3 Tbsp. vegan mayo (sub tahini for a more earthy, nutty flavor)
- 1/2 tsp. dijon (or spicy mustard, if using tahini instead of mayo, use 1/4 tsp)
- 1 Tbsp. maple syrup (or sub agave or honey if not vegan)
- 1/4 cup red onion (chopped)
- 1 Tbsp. dried dill (finely chopped)
- salt
- pepper
- 4 pieces rustic bread (lightly toasted, gluten free for GF eaters)
- avocado (optional)
- onion (optional)
- tomato (optional)
- lettuce (optional)
- 1/4 cup hummus
- 1/2 lemon (~1 Tbsp)
- 1 tsp. dried dill (or sub 2-3 tsp fresh)
- 2 cloves garlic (minced)
- water (or unsweetened almond milk to thin)
- sea salt (Optional:, to taste, I didn’t need any)

This was very tasty and fairly easy to make. VERY messy though.

This. Sandwich. Is. BEYOND. AMAZING!!! I just finished eating it for lunch, and I had to find it on here to review it...It was bursting with flavor and texture and perfection. I can't wait to eat another sandwich again!
