- 1 1/8 lb. minced beef
- 1 1/2 cups red wine (full-bodied)
- 3/4 cup hot water
- 2 stock cubes
- 4 Tbsp. Worcestershire sauce
- 2 Tbsp. honey
- 2 red bell peppers (chopped)
- 400 mL chopped tomatoes (tins)
- 1 tsp. smoked paprika
- 4 tsp. cumin
- 2 tsp. ground coriander
- 2 tsp. hot chilli powder
- 3 tsp. ground ginger
- 2 tsp. herbs (mixed)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 chilli (chopped fresh, more if you like it hotter)
- 3 Tbsp. tomato puree (/paste)
- 1 Tbsp. tomato ketchup
- 1 tsp. chipotle paste
- 2 chunks dark chocolate (80 or 90% cocoa)
- 400 grams kidney beans (drained and rinsed)
- 420 grams mixed beans (drained and rinsed)

It is very tasty
I made a few changes
I used pork beef blend and used 2lbs
I added a splash of fish sauce and mushroom powder
Used fire roasted tomatoes and added carrots celery with the onions and corn at the end
I used half the amount of honey

I agree with everyone, this dish is amazing
But the original recipe does say to add four tins of chopped tomatoes, I do this dish every time and just add a little bit more dark chocolate and some gravy granules to make it a wee bit thicker.

Have to agree with so many other people….. this really is the best chilli I’ve ever made! I used Turkey mince instead of beef, and pul biber Turkish chilli flakes (about 2tbsp) but followed to the letter everything else. And it was magnificent!!!

This was an incredible and wonderfully enjoyable recipe. I used all the ingredients except for the chipotle paste as I didn’t have that on hand and it didn’t miss a beat in taste. I played up with the amounts of everything based on my own taste for it all. Using 1 kg of beef mince sitting in the fridge and needing to be used I added in about 2 cups of tasty red wine, cooked that down, used 500ml’s of beef stock w 5 big squeezes of the Worcestershire sauce. As I added the honey which 3-4 tablespoons was the plan the lid then fell off adding another 2 more. I also added spinach, a whole bag of fresh spinach and I put together my own amounts of kidney beans (2 cans), black beans (1 can), and chickpeas (1 can). I was equally excessive with my tomato paste by about another tablespoon, the amounts of the spices that were added in were probably always a few more teaspoons extra, and I used two cans of crushed tomatoes, and one whole jar of tomato passata that had basil in it. Though I still added the chili powder, and the paprika, probably the most surprising addition to amp up that chilli flavour was the kimchi sauce. It just added a whole other depth. So amazing!!!

I have made this Chilli a couple of times now and it never fails. Really like the added chocolate now to the recipe. Bursting with great flavour and texture this Chilli is a real winner

Very tasty!! Added extra chilli flakes to heat it up a bit plus substituted a tin of chopped tomatoes for a tin of baked beans and sugar instead of honey because I didn’t have 4 tins of tomatoes or honey, and it still tasted great !!!

Thank you for this! Great recipe! 👏🏻👏🏻👏🏻. When served I only swapped the sour cream for 0% crème fresh and the garnish of diced chilli was 2 red, 1 red birds eye (rough chop) along with the chopped Coriander (as advised) and it was spot on. Seriously, it was really special. Well done
