I don't have a cast iron pan but my stainless steel worked just fine. It smoked up the house quite a bit but it was well worth it. lol
For the chimichurri I added cilantro, shallots, lemon juice/zest and TONS of garlic and it was AMAZING!!!
When everything was finished the flavors all came together beautifully!! My husband absolutely loved it!! This will definitely be added to the dinner rotation list! ❤❤

Didn't have a cast-iron pan so didnt turn out as crispy as I would've liked, but absolutely delicious still! I paired mine with baked asparagus and white cheddar broccoli cavatappi pasta!

Turned out great... used boneless skinless thighs so kept chicken and “churri mix” in covered fry pan after searing as well I had cilantro on hand not parsley... great twist!

Unfortunately, I used curly parsley, not the flat leaf that the recipe called for, which changed the flavor. I'm definitely going to try again with the correct ingredients. With that said, the thighs were moist and skin crispy. I cooked in the pan double the time, so the oven baking equaled 15 minutes (convection at 400 degrees).

I've made this twice now and it's one of my favorite chicken dishes! The directions are super simple and all of the ingredients are easy to find. The chicken comes out so tender and juicy, it's the best!
