Great Chinese chicken salad, but it was a lot of work! I used only a quarter cup canola oil in the dressing and a little extra soy sauce, which gave it a little more bite. I also substituted Chinese peas for the bean sprouts, and I added toasted slivered almonds at the end with the fried wonton strips. I used packaged fried wonton strips to save time. This recipe has a nice balance of flavors and textures.
