I read reviews beforehand and I whipped my egg whites and folded the other ingredients in so that it was easier. It wasn’t. Then I remembered someone else’s review “banana scrambled eggs”. And I couldn’t get THAT out of my head. Banana scrambled eggs are no bueno.

These were good and simple to make. Great if you're trying to eat clean. These pancakes don't leave you with that heavy full feeling when you're done. I blended my ingredients with a hand mixer and didn't have any issues with it falling apart.

I read a few reviews that they fall apart so I beaten the egg stiff and folded it into the mixture. It came out really great and fluffy !

Really enjoyed these for a light meal! Set the griddle at 300°, instead of at 350° as the recipe states and they turned out fine...didn’t burn, didn’t stick, didn’t fall apart, but you definitely have to be gentle when flipping. I topped them with nut butter and some syrup. I would make them again!
