- 2/3 cup couscous
- 1 cup cherry tomatoes
- 1 cup cucumber (chopped)
- 1/4 cup onion (chopped, rinsed)
- 1/4 cup flat leaf parsley (chopped, divided)
- 3 Tbsp. wish-bone red wine vinaigrette dressing
- 2 tsp. lemon juice
- 1/2 tsp. grated lemon peel
- 3/4 cup water

Directions
- Combine couscous with remaining ingredients except 1 tablespoon parsley in serving bowl. Sprinkle with remaining parsley.
- Bring water to a boil over high heat in 1-quart saucepan. Stir in couscous. Remove from heat and let stand covered 5 minutes. Fluff with fork.
